Here is the procedure for the preparation of Tasty yummy Jalebi …
Required Ingredients :-
Preparation Method :-
Take Maida into a bowl and add curd or water, preferably sour curd and give a thorough mix until it turns fluffy.
Add 2 cups of Sugar and 1 cup of water and boil it until its sticky enough…( no need of 1 string consistency)
Also add 1 tspn of lemon juice to avoid further crystallization of sugar.
Sugar syrup should be hot and not super hot (If it is cool the jalebi doesn’t absorb sugar syrup and if it’s too hot it becomes soggy)
Pour the batter into a piping bag or a plastic water bottle or a milk pouch and make a small cut at 1 end where the jalebi has to be poured and the other end should be tied with rubber band
If a plastic water bottle is used heat the lid slightly and push the lid inside out and cut the tip to make a hole
Then heat the pan containing oil..
The pan should be broad one and oil should not be more….
Start pouring the batter circle wise and fry
Flip after few seconds.
After frying take out the jalebis and dip out immediately into the sugar syrup and leave it for a minute and take it out immediately..If left for long time it gets soft.
Note: the jalebis puff a little while frying and it is an indication that it wil absorb syrup nicely
