Preparation of Pure Ghee Mysore Pak

Pure Ghee Mysore pak recipe

1. Gram flour 1 cup
2. Sugar 1 n 1/2 cup or 2 cup (according to individuals taste it could be varied)
3.Ghee 2 n 1/2 cup

Ghee should be melted and taken, but it should not be smoking hot or else the Mysore pak turns brown…

An aluminium container or any vessel should be greased with ghee in prior before the preparation

Preparation Method :+

Add 2 cups of sugar on a non- stick pan and boil until 1 string consistency is obtained.. do not over boil til 2 string

Add 1 cup gram flour to the sugar syrup and mix thoroughly without any lumps in it

When small bubbles start to appear start adding ghee little by little til the gram flour absorbs it completely

Repeat the process until the ghee leaves sides of the pan and the mixture seems to be fluffy and light

At this time the mixture should be poured into the container. may be an aluminium or any vessel of preference and gently tapped

Do not press at the top of it

Leave it as such for 20 minutes so that it cools and with the help of a knife mark upon it with your desired shape and pieces

After an hour or so it can be deep cut and kept to get completely cool for about 2 to 3 hours

Then demold the vessel into a plate…and gently run the knife over the pieces and it gets separated…

Note: its not necessary that the ghee taken should be consumed completely. It depends on the gram flour and ghee leaving the sides of the vessel..
So it varies…
